During finishing, finishes release volatile solvents and other fumes that can be harmful if breathed in. Proper ventilation moves these vapors out of the workspace and brings in fresh air, which lowers the concentration of airborne contaminants and improves overall air quality for the workers. This safety benefit is the main reason ventilation is important in finishing.

Ventilation can influence drying somewhat by aiding solvent evaporation, but that effect is secondary to safety. Gloss level depends mostly on the film-forming properties of the finish, surface preparation, and application technique, not how much air is moving. Tool durability isn’t directly affected by ventilation either.
